Miya Shoyuten
This soy sauce maker is located a 10-minute walk from Sanukimachi Station on the JR Uchibo Line. Established in 1835, the longstanding company makes its soy sauce by first crafting its own koji malted rice using old-fashioned wooden tubs. The company uses no additives except alcohol to suppress mold growth, creating pure brew dark soy sauce. The company's Tamasa Shoyu is a standard soy sauce which takes around one year to make. The company's Usushio Shoyu low salt soy sauce is made according to a proprietary method which removes only the salt content from regular soy sauce, and makes a great soy sauce for using as a condiment to sprinkle on foods.
