Kanro Soy Sauce Museum (Sagawa Shoyu-gura)

A museum run by Sagawa Shoyu Soy Sauce Brewery, established in 1830. Part of the storehouse where Yanai's specialty Kanro Soy Sauce is kept has been opened to the public as a museum. Kanro Soy Sauce is a Sai-Shikomi (refermented) soy sauce made by adding malted rice to already finished soy sauce and allowing it to ferment again. Inside the museum you can watch the production process of Kanro Soy Sauce brewed in the cedar tubs, and various tools used to make soy sauce. The traditional smooth Kanro Soy Sauce is shipped throughout Japan and overseas as well and is always well received.

    醤油樽が蔵の奥に有ります。醤油は1780年に高田伝兵衛が想像して藩主に献上したところ大変賞賛されたそうです。蔵内の見学は無料で出来ますよ。

    小豆島で醤油蔵の見学をして以来の香りでした。大きな樽で醤油を作っていますが、製品はあまり大量には造れないようにも思いました。実際、どうなのか質問すればよかったのですが。入り口に、湧き水がでていて、これは美味しかったです。

    甘口の刺身醤油がオススメと言うことで買って帰りました。醤油樽は、現在ではとても貴重とのことで、今ではもう作る事が難しいらしいです。
