KIJIYA
One of Japan's rare restaurants specializing in pheasant cuisine. It's been open for over 30 years and is located far from the city in the Hitoyoshi hills. Pheasant meat is light, slightly sweet, and not gamy at all. Being cooked too much makes it tough and about half as good, so to keep it tasty they just cook it until 30% to 50% done. There are many dishes that you rarely find elsewhere, including raw pheasant with a crispy texture and miso-preserved eggs with a nearly addictive rich and gooey consistency.

- 絶品のきじ料理!
- 初めて人吉へ行った際に利用しました。何が名物かも知らずに調べたところこちらのお店がヒット。訪問した所、川沿いのこたつのある個室へ案内されとても落ち着いて食事をしました。きじを食べるのは初めてでしたが普段食べる鶏より歯ごたえがあり、とてもおいしかったです。
