Sobazen
"A soba noodle restaurant situated along National Route 249 traveling from the vicinity of the Sea of Japan towards the Sojiji Temple. The restaurant serves the kind of ""monzen"" soba noodles which were once presented to those worshipping at the Sojiji Temple when it was the head temple of Soto Buddhism. These noodles are made according to a unique method which uses Japanese yams harvested deep in the mountains instead of water to bind the buckwheat flour; the restaurant's buckwheat flour is also grown locally in Noto. When you chew the noodles, they exude the flavor of Japanese yam, and thus unlike regular soba noodles which you are supposed to slurp, chewing the noodles and savoring their flavor is considered the proper way to eat them. Also of note is the fact that the restaurant only makes use of exquisite Japanese yams stocked from a Japanese yam expert located in Wajima City. Customers are sure to enjoy a bowl of soba noodles unlike anything offered anywhere else."

- 輪島市門前町にあります、総持寺の近くにあるそば屋さんですここの蕎麦はつなぎに自然薯を使いまたそばつゆは関西風味ですが良くだしがきいています、またそば打ち体験もできます。

- ラーメン、ランチセットなどのそば以外のメニューもありました。 輪島市はフグも獲れるらしく、から揚げなどの1品料理もありました。店内には輪島産のお土産も少しだけですが置いてありました。

- 美味しいお蕎麦
- グループで行きました。それぞれ違ったメニューを選びましたが、みんなどれも美味しかったと言っていました。一緒に沿えてあったお豆腐が、思わず美味しくてビックリしました。
