This Japanese restaurant is located in Chuo Ward, Niigata City, Niigata Prefecture and is said to be the birthplace of “Wappameshi” rice, one of Niigata’s signature dishes. The restaurant founder conceived of the dish with Kitaoji Rosanjin. It involves bending a thin piece of cedar to create a “wappa” container, into which is placed rice boiled in soup stock, seasonal seafood, and other ingredients. The “sake oyako” dish, made with Murakami-produced salmon and salmon roe, is quite popular. There’s also “noppe (soup with fried tofu and other ingredients),” tender Namban shrimp, oysters, and other types of Niigata cuisine, not to mention a great lineup of local brews.
