Kojimaya Souhonten, said to be the birthplace of local specialty Hegisoba, located in Nakayashiki, Tokamachi City, Niigata Prefecture. Hegisoba is a type of soba that is served in a wooden dish called a hegi. Funori seaweed is added to the homemade buckwheat flour ground on a millstone to make this popular Niigata specialty. The restaurant serves a variety of dishes from bowls of noodles to more formal dishes, priding itself on always sticking to the three principles of freshly ground, freshly kneaded, and freshly boiled. A popular dish on the menu is their seasonal Tenbara-zen served with a large portion of kakiage (mixed vegetable and seafood tempura). There is also an area in the restaurant which introduces the history of the biggest water mills in the prefecture and the story behind hegisoba.

雪の秋山郷を見学する旅に行った時に十日町に寄って、有名なへぎそばを食べに行った。14時半ころの到着で開いてるかどうか不安であったけど通し営業らしく、無事そばにありつけた。天婦羅とのセットが美味しそうであったけど、今はあんまり脂っこいのは食べられないんで鴨汁のやつにする。そばはつなぎに特色があるということで独特の滑らかな食感、鴨はとてもおいしかった。

今日行ってきました、午後３時過ぎでしたのでまさか蕎麦屋でこの時間で待ちがあると思いませんでしたが、まさかの五組待ち。人気なんですねやはり。また以前とはちがいイーパークの予約が出来るようになっていたのは少し驚きました。久々に食べた感想は蕎麦はとにかく歯ごたえがしっかりあり好みです。美味しいとおもいます、ただ理由はわからないけど汁の味が蕎麦にあまり乗らない感じがします、前食べた時にはそう感じなかっ...
