This shop and café is managed by Naogen Soysauce, a long-established soy sauce company founded in 1825. It is located in Ono Town, Kanazawa City, Ishikawa Prefecture. As a renovated old brewery warehouse that doesn’t let in any outside light, the interior of the shop has a unique atmosphere, where new and old mix. The shop contains products such as soy sauce, dressings and senbei crackers that have supported the food culture of Kanazawa. In the café space, customers can enjoy such things as dessert sets that incorporate soy sauce, coffee and Japanese tea.

大野町見学に行ったときに寄りました。古い蔵を改造した感じのお店で、商品もレトロな感じのラベルに洒落た入れ物で、すてきです。醤油飴や醤油を使ったお煎餅やドレッシングなども売られてます。試食、味見も気軽にできます。私が行ったときは、クルーズ船のツアー客のバスが横づけされていて、お客さんもたくさん来ていましたが、普段はもっと静かなのかな？お店の奥に、古い民家の様子を見学できるスペースが少しあり...
歴史ある醤油蔵

金沢を訪れました。今回は、加賀藩前田家の時代から続く歴史ある醤油蔵町の中でも、直源さんを訪れました。事前予約して製造過程等の説明をして頂きました。最後にショップで、直源さんの醤油やドレッシング等の味見をさせていただきながら、好みのアイテムを購入して宅急便で送って貰いました。普段、何気なく使っている醤油でしたが、奥が深いことが良く分かりました。
