Most dishes are made using “Tamanaha miso,” which is produced through natural fermentation without additives by the long-standing Shuri shop “Tamanaha Miso Shoyu,” a former purveyor for the Ryukyu Kingdom. Starting at 7:30 a.m., it offers miso-themed dishes for breakfast, lunch, tea time, and dinner.
