The yuba (tofu skin) on offer is made at their in-house workshop with domestic soybeans, and is distinctive for its “melt in your mouth” tastiness. The French-style course featuring fresh drawn yuba and other seasonal ingredients is particularly popular. The drawn yuba has an especially simple yet tender taste, served warm with grated ginger and diluted soy sauce.
