This is Kyoto's oldest kamaboko fish cake shop, founded in 1844. The name Izuman is said to come from the fact that the founder was a native of Izumo and named Mansuke. They used the freshest seafood and make their fish cake in the traditional way, by hand, without machines. Their product is popular not only for its taste, but its outstanding texture and mouthfeel. The shop's flagship product is the Higashiyama Gyohei, made from minced hamo conger on a bamboo skewer, grilled over charcoal without steaming, and made to look like a Maiko's pinned hair. They also offer hamo somen noodles in summer.
