They forgo more efficient mushroom bed cultivation in favor of growing on timber, which requires hard work and is sensitive to environmental influences. They rely on the gradual decomposition of hardwoods such as nara and kunugi oak, resulting in delectable, fragrant shiitake with a nice, soft texture. You can pick-your-own shiitake mushrooms there if you make reservations at least a day in advance.
