"A veteran Matsue shop that has been making Izumo soba noodles with flour stone-ground in-house since its establishment in 1952. Izumo soba is known as the ""original buckwheat noodles."" It has a distinct aroma and flavor as well as a dark color from the grinding of unhulled buckwheat. As times change and shops making Nihachi-soba (made with 20% wheat flour and 80% buckwheat flour) increase, they still make Juwari soba (made with 100% buckwheat flour) without any additions. The soba noodle broth uses an old-fashioned cooking sake and high grade dried bonito to deliver the traditional flavors of Matsue."
