湯波料理希望の場合は要予約です。京湯葉は引き上げるときに1枚だけれど、日光湯波は二重に折って引き上げるため、湯波と湯波の間に豆乳をわずかに含みます。京都のものと比べると、ふっくらとして噛むと微妙な歯ごたえがあります。生湯波の酢の物、たぐり湯波のあんかけ、結び湯波の椀、湯波のおつくり、海老湯波巻揚げなどの昼のコースで伝統の食材の千変万化を楽しみました。
