    Sushi now takes many shapes and varieties around the world.

    However, Edomae sushi AKA nigiri sushi, is the classic we all recognize, with the topping and rice hand-pressed by the chef into small portions. Sushi is widely available in Japan, from supermarkets to shopping malls, but here we’re focusing on the restaurant experience.

    ・Traditional sushi restaurants (寿司屋/sushi-ya):
    If you want the whole experience of what sushi is all about, we insist that you go to a traditional sushi restaurant. The atmosphere, engagement with the chef across the counter, service, and the food are perfectly balanced to create an impressive dining experience.

    ・Sushi chains:
    They provide sushi at a reasonable price, which is usually fixed. Some even provide entertainment, such as cutting a full-size tuna for the guests and offering fresh sashimi cut right off the fish.

    ・Conveyor belt-type sushi restaurants (回転寿司/ kaiten zushi):
    This is a fast-food type of a sushi restaurant where plates of sushi rotate on a conveyor belt within reach of the seats, and customers simply pick one up. The color of the plate usually reflects the price, which provides relief especially if you are on a budget.

    Each restaurant is unique, varying in toppings, house rules, and pricing – which can all be confusing, especially if you don’t speak Japanese! However, if you know what your preferences are (e.g., budget, casual, friendly, with family, etc.), ask a local for recommendations or just do some searching online. Many of these restaurants are family operated, with the son taking after the father.

    When to eat

    ・Breakfast: Sound crazy? A sushi breakfast at the Tsukiji fish market could be the best you’ve ever had.

    ・Lunch: Many restaurants have a pre-fixed lunch menu on weekdays, and the offerings are usually a good value. One set has an assortment of sushi from the day’s catch, and will give you an idea of the taste of the restaurant. The restaurant may be busy though, especially in the business districts.

    ・Dinner: Definitely served in a more relaxing atmosphere, and also offering alcohol and side dishes. Prices vary depending on how and what you order – one serving plate or a la carte. Ask the chef for an average dinner budget of the restaurant in advance if possible.

    How to order

    ・Don’t hesitate to let the chef know your food preference. If you are not sure what you like and don’t like yet, order the one plate dish, and point out what suited your taste.
    -One serving plate (ichinin-mae): An assortment from today’s catch, usually available in several grades.

    ・a la carte: If you know your food preference, pick and choose your order freely, or ask the chef for suggestions. If you are comfortable with sushi in general, try asking for “omakase” – literally “leaving it up to the chef.” Make sure you let the restaurant know your budget if you have one – the chef will politely let you know what’s realistic.

    Rules and manners

    There is no single rule or manner regarding eating sushi – except that you are free to eat by hand or chopsticks. House rules can be casual to formal depending on the restaurant. For example, at some high-end restaurants the chef puts soy sauce on the sushi for you. Finding a restaurant that you feel comfortable at is part of the fun.

    Pricing

    actors influencing the price include area, the type of restaurant, and the market prices of the fish. Alcohol also adds to the bill of course.

    If going for the traditional style, having a budget of 10,000 to 15,000 yen per person would provide a satisfying dinner experience including drinks. However, many famous high-end restaurants can easily go double that price. Lunch will be priced more economically, from around 2,000 yen, but the type of sushi will be selected accordingly by the chef.
