    A shochu distillery established in 1911. The distillery’s flagship Akarui Noson is made the traditional way in earthenware pots with spring water. Other than the first three days of the new year, visitors can view the distillery any day from 9 a.m. to 5 p.m. The distillery tour takes 15 minutes and during the guided tour you can see everything from the actual production area where shochu is being made to the bottle filling area. The distillery’s shop offers samples and sells liqueurs and shochu liquors made on-site. Visitors can also hand draw their own shochu label and create their very own, one of a kind bottle of shochu.

    "This shochu distillery with deep roots on Yakushima Island, the ""Alps of the Sea,"" has created handcrafted honkaku shochu in traditional earthenware pots since being founded in 1960. It is the only distillery that makes sweet potato shochu with sweet potatoes grown on Yakushima Island. Visitors can even watch the mashing process if they visit at the right time. The distillery uses 56 irreplaceable earthenware pots passed down since 1887 and the island's extremely soft water, which is listed amongst the Top 100 Famous Waters of Japan, to create shochu with a smooth taste and fine flavor."

    Short tour and explanation of production of Shōchū (焼酎) followed by tasting session afterward. Tour is in Japanese so you will require a translator.

    "This brewery is located a ten-minute bus ride from Amami Oshima Airport, and a four-minute walk from the Aijuen-mae bus stop. It manufactures and sells brown sugar shochu, which is permitted to be made only on the Amami Islands. Jogo, a shochu made from brown sugar using Amami Oshima's sugarcane and Tatsugo Town's famous water ""Jogo no Tensensui,"" is characterized by its mild and refreshing taste. It has been awarded with the Monde Selection. In addition, there is a shochu tasting corner, and factory tours are held three times a day."

    This refined sake brewery, Kagoshima’s foremost, is located a 10-minute drive from JR Kushikino Station. Utilizing a 120-kilometer-long tunnel dug as part of the Kushikino Mine which once supported the bygone Satsuma Domain, the brewery produces shochu liquors based on recipes predating the Meiji period. Visitors can ride a mine trolley and view the earthenware vessels used for brewing and at the same time experience the vestiges of what was once a prosperous mine. The brewery’s shop sells gifts and souvenirs such as local specialty products and Satsuma Kinzangura brand shochus and refines sakes. Visitors can also relax in the adjoining brewery café.

    A facility where you can see and hear up close the processes involved in creating Kagoshima’s famed sweet potato shochu liquor. Here visitors can breathe in the scent of koji wafting from one of the top wood barrel stills in the prefecture, and view the traditional production process involved as the chief brewer and other workers go about tending the great earthenware pots buried in the ground. The adjoining shop sells some 200 varieties of Satsuma (Kagoshima) shochu, including popular and limited run products, plus other products and merchandise offered no place else. Shop to your heart’s content while sampling shochu liquors and umeshu plum liqueurs.

    This brewery and distillery founded in 1868 produces honkaku shochu with a focus on recreations of shochu from the Meiji period. It also produces craft beers, liqueurs, and more. They are most notable for the level of attention paid to the earthenware pots, stills, koji room, and other facilities used to handcraft each of their refined honkaku shochu. One of their notable products is Nanako, an organic and undiluted shochu made with Japan's oldest existing culture of yellow koji mold (Aspergillus oryzae) that recreates the flavors of ancient shochu. Visitors can enjoy touring the brewery's facilities and tasting its products at the attached shop.

    "This distillery was founded on a slope overlooking the East China Sea in 1967. It strives every day to make shochu while receiving the blessings of the sea breeze and the wild yeasts that have long made a home in the distillery. Their flagship brand, Satsuma Morohaku, is made in accordance with the shochu making traditions of the Akune region. The use of white koji mold gives this excellent sweet potato honkaku shochu its characteristically smooth taste. Its name comes from a historical anecdote in which Shimazu Mitsuhisa, the second lord of the Satsuma Domain, referred to the local shochu he was presented with while visiting Akune as ""morohaku"" in praise of its excellent flavor. Another popular offering is Yakiimo Kurose, a roasted sweet potato shochu that has captured the hearts of many honkaku shochu fans with its comforting sweetness and the flavor of roasted sweet potatoes."

    "This distillery is located in Minamitane Town, the closest town in Japan to space. Since it was first established in 1926, the distillery has continued to make shochu with deep roots on Tanegashima beloved by the island's people. Their flagship brand Nansen is a traditional shochu noted for its rich flavor and gentle taste. The shochu, which has a pronounced scent of sweet potato, instantly fills the palate with a mellow flavor. In addition to preserving shochu making traditions, the distillery also engages in numerous new initiatives. One such initiative was the creation of Uchu Kyodai, a sweet potato honkaku shochu that features characters from the manga series ""Space Brothers"" on the bottle. Another initiative was the creation of HAYABUSA2 Tanegashima kara no Tabidachi, which commemorated the launch of the Hayabusa2 asteroid explorer."

    "This shochu distiller established in 1968 is comprised of two separate distilleries; Sengokugura, which aims at preserving the traditions and culture of shochu, and Shisangura, which aims to produce ""the ultimate everyday spirit."" The company continues to produce fine shochu that connects people to people. A 60-meter-long tunnel storehouse that provides the stable temperature and humidity needed to carefully age shochu has been built on the grounds. It stores large earthenware pots that contain the equivalent of 10,000 standard 1.8-liter bottles. The Sengokugura distillery offers tours year-round. Visitors can view the tunnel storehouse, the wooden barrel still, and other facilities. It is even possible to watch shochu being made by hand in earthenware pots and a wooden barrel still from September to December."

    "This distillery established in 1875 makes and sells sweet potato honkaku shochu. It continues to craft sweet potato shochu brewed with groundwater of superior quality. Their Jinshichi shochu is made with nothing more than mineral-rich natural groundwater, kurokoji (black koji mold), and freshly-harvested sweet potatoes. It is noted for a savory flavor evocative of roasted sweet potatoes. It has a refreshing sharpness and an enjoyable light sweetness and minute savoriness characteristic of kurokoji. In addition to respecting traditions, the distillery also explores innovative approaches to shochu making. One example of this is their development of ""space shochu"" made with Atsuhime yeast that was flown on NASA's Space Shuttle and cultivated in zero gravity."

    "This brewery is located in Shirai, Tokunoshima Town, and is surrounded by abundant water and sugar cane fields in an idyllic countryside area. The main ingredient is pure brown sugar, and their mainstay product is ""Shima no Napoleon"" filled with natural spring water. There are also a variety of other brands such as Mikado, aged over a long period of time, as well as plum wine using brown sugar shochu that is rare even in Japan. The young Touji (master brewer), who has inherited the traditional manufacturing method using natural water that flows against hard bedrock containing coral reefs on Tokunoshima, the island of longevity, and select brown sugar, makes the flavor deeper and easier to drink."

The representative brand ""Yusen"" is loved by the locals to the extent that it has also become synonymous with sake from Yoron Island. While mainly 20% ABV, it is also made in 25% and 35% ABV varieties."

    This Japanese brewery company is located amidst the lush mountains situated along a river valley a 10-minute drive from JR Kokubu Station. The brewery is famous for having created Imo Koji Imo, the world's first sweet potato shochu made exclusively using sweet potatoes, including a sweet potato-based koji malt. The brewery's sweet potato shochus are made with sweet potatoes from Kagoshima and Miyazaki Prefecture, and spring water which wells up from 100 meters underneath the ground of Mt. Kirishima. The brewery's Tsurunashi Genji, a sweet potato shochu notable for its superb, sweet flavor, is also recommended. Note that the company's products are not sold at its brewery.

Over 100 active volcanoes across Kagoshima make it one of the Japan's most exciting prefectures. The prefectural capital, Kagoshima city, looks out to one of the prefecture’s most spectacular volcanoes, Sakurajima, an island of its own that can be visited and seen close up or admired from afar, with the promise of breathtaking sunsets complete with frequent puffs of smoke and ash. Down the Satsuma Peninsula, the most southerly part of mainland Japan, waterfalls, sand onsen, and fascinating history await, while Kagoshima's abundance of satsuma imo (sweet potato) provide a wholesome snack as well as one of Japan's favourite drinks - shochu.
