This is a facility where one can try “jigoku mushi (literally, hell steaming),” a traditional cooking method passed down from the Edo era in which foods are steamed to degrees of up to 98°C using the hot steam from the hot spring water, and the rapid process condenses their flavor. Foodstuffs for hell steaming are available on site, or one can bring their own. Inside the facility are also exhibits on the history of Kanawa, hot springs and hell steaming, a drinking area, and free-to-use foot steamer and bath.

This place is popular, we waited an hour though the queue is very well managed. We weren’t so hungry so we shared a vegetable platter and the manjuku buns. Very cool experience to steam the food...

Opened by the Emperor’s chef Shiro Miyagawa in 1926, this Toriten chicken shop emerged in the early days of the Showa period as a place for chicken kamaboko tempura. Nowadays it is famous for its food loved dearly by those of Oita Prefecture. One can enjoy various tastes by adding Oita Prefecture kabosu or vinegar soy sauce and mustard. The standard menu’s “Honke Toriten Teishoku” is satisfyingly voluminous. From Beppu Station take the Kamenoi bus towards APU, alight at Funakouji, and walk five minutes.

"This restaurant invented and serves Hita yakisoba noodles. The longstanding establishment is also the flagship location of a chain of restaurants with franchises across the Kyushu region and the rest of Japan. The restaurant's previous owner is believed to have invented the word ""yakisoba."" The restaurant is most notable for making everything in-house, including not only the noodles and sauce but even the toppings. In addition to set meals, you can also order toppings like a raw egg a la carte. The restaurant also offers a full array of sides and desserts, and even sells yakisoba noodles packaged to give as a gift and in chilled packs which you can take home and enjoy at your leisure."

The yakisoba with bean sprouts is a famous dish in Hita area. However I was not impressed though I love bean sprouts. just so-so.

Oita Areas

around-area-map

A trip to Oita is tantamount to a long soak in the Beppu baths. The mountainous, coastal prefecture of Oita is renowned for having more onsen than any other prefecture in Japan, most of which lie in the city of Beppu on the west coast of Kyushu, recognizable by its pungent sulphuric aroma and the clouds of steam that puff up across the hillside. Away from the Beppu hot springs await mountains, waterfalls, and temples, so don’t hesitate to explore Oita a little further.
