"This longstanding Japanese confectionary shop was established in 1897. The shop continues to make Shokanji Matsukaze, a traditional confection known as the ""thinnest Japanese confection in the country."" Just 1.2 millimeters thick, Shokanji Matsukaze are an elegant and exquisite treat; made from high quality flour and beet sugar, they are toasted to perfection using a proprietary method and then cut to size by hand. They are said to have been one of the aspects of Kyoto culture the powerful Kikuchi clan brought back to the area in the Muromachi period. Crispy and characterized by an elegant sweetness, these confections are a favorite of all ages as a teatime snack and as a gift to give on special occasions."

This longstanding confectionary shop has been in business for over 90 years. The shop continues to make Sakura no Akebono, a delicate, pastel-colored confection which is one of Kikuchi's most well-known; as well as dorayaki pancake sandwiches; madeleines; and a variety of other sweets. Sakura no Akebono are a type of traditional rakugan candy which are made with a focus on creating an exquisitely moist texture. Made using Kumamoto glutinous rice and Kikuchi Onsen hot spring water, these soft confections have a melt-in-your-mouth texture. The crumbly rakugan outer crust is stuffed with a filling made with granulated sugar and glucose syrup. The shop receives orders from across the prefecture and beyond for this popular product to enjoy during New Year's, at weddings, and during the Doll Festival.

This Japanese confectionary shop was established in 1940. The shop continues to make Japanese confections by hand with fastidious attention to flavor. For its sweet azuki beans, the shop only uses azuki from Hokkaido, and its azuki bean paste, diligently cooked each morning at 6 a.m., is characterized by an elegant, orchid color. The shop's Takemitsuko is a crispy yet soft cookie sandwich inspired by the history of Kikuchi which is filled with apricot jam and garnished with crunchy almonds. The tasty confection was awarded the Minister's Award at the National Confectionary Exposition.

    Kumamoto Kikuchi-shi Wai 649-4
This Japanese confectionary shop is famous for the Kuridago, sold in department stores across the country. The shop sells Kuridago made with lavish amounts of huge chestnuts from Kikuchi; ikinari dango cakes, a famous local confection from Kumamoto; and other sweets. The shop's particularly popular Kuridago look as soft and warm as they are. They consist of chewy dango dumpling dough wrapped around chestnuts whose skin has been painstakingly removed one at a time by hand. The slight saltiness of the dango dough and the light, innate sweetness of the chestnuts results in an exquisite balance of flavors. The shop is dedicated to avoiding the use of additives and its tasty treats are only sweetened with sugar. The shop uses four kinds of sugar depending on the confection - zarame granulated sugar, standard granulated sugar, brown sugar, and wasanbon fine-grained Japanese sugar.

This Japanese restaurant is situated in the middle of forest not far from Kikuchi Gorge. The restaurant serves choice mushroom cuisine and local heritage chicken from Kyushu. The nameko mushrooms the restaurant uses in its popular dagojiru soup are personally cultivated by the owner, who runs a shiitake mushroom farm. The restaurant's heritage chicken, grilled over a charcoal brazier; and sides made with local vegetables and edible wild plants are superbly delicious. Here customers can relax and enjoy a slow meal while experiencing the area's seasonal natural beauty through all five senses.

    Kumamoto Yamaga Yamaga 243-2
This Japanese confectionary shop is located close to Omiya Shrine, a shrine which has attracted worshippers since ancient times as the area's protective shrine. Situated across from the shrine's Toroden, the shop sells Yamaga yokan, a famous confection from the Yamaga area which consists of koshian smooth sweet bean paste wrapped in gyuhi soft rice cake. A favorite of many since the Meiji period, these tasty treats have a simple, lightly sweet flavor. The confection's gyuhi is made with rice flour instead of glutinous rice, ensuring that it stays pleasantly soft for an extended period of time. In the past, Yamaga yokan was made by many teahouses in the area, but today only three establishments including this one produce the confection.
