    This natural pork bone ramen shop opened in 1960 in Fukuoka, and it is the main location of a chain that is beloved nationwide. The soup is light on the unique pork bone taste and aroma, and it contains a secret sauce made from chili peppers that floats on the surface. Visitors can adjust the toughness of the noodles and the richness of the soup as they see fit. This location offers a “concentration counter” in which the seats are separated by walls, allowing customers to focus on enjoying the bowl of ramen in front of them. With the “kamadare” tonkotsu dish, only available in the Tenjinnishi Street shop, one can really savor the rich taste and a full aroma. In addition, the chashu pork here comes from the belly rather than the shoulder, giving it an extra rich flavor. These features came about by chance, in order to quickly satisfy the workers at the fish market when the restaurant was first established, and in response to customer demand. These services have become soul food for Fukuoka citizens, and first-time customers are sometimes puzzled when they are asked how to boil noodles at a restaurant whose menu consists only of ramen.

    A rough, local version of ramen. Goes well with the red ginger and sesame provided on the tables. Definitely not a refined dish, but quite satisfying with good flavor and texture balances.

    This is the main store of Taiho Ramen, which opened in 1951. Its tonkotsu soup has stewed for half a century and the traditional “yobimodoshi soup” was created here. The chashu pork, prepared from the leg or rib depending on the menu, attest to the care taken by the cooks. It is around eight minutes on foot from Nishitetsu Kurume Station.

    One of the oldest Tonkotsu Ramen restaurant. Depending on your experience of Tokontsu ramen, some people may not tolerate this smell. Locals love the flavor and the taste of this ramen.
