This udon restaurant is next to the “Shikoku Village” folk museum in Yashimanaka Town, Takamatsu City, Kagawa Prefecture. It operates out of an old home with a straw-thatched roof built at the end of the Edo period, giving the interior an authentic Japanese feel. The “kama-age udon” is a popular option for the gentle texture and springiness of the noodles. Other well-received options include the “tokudai udon” for two and the “kazoku (family) udon,” which comes in a large tub. The broth, with its secret dried sardine-base, and the freshly fried tempura make a great combination.

You’ll find this popular udon shop near the Museo Marugame Hirai (Marugame Hirai Museum) in Doki Town, Marugame City, Kagawa Prefecture. The noodle recipe was passed down from parent to child, and everything is done by hand, from the kneading of the dough to the stretching, cutting, and boiling. The udon freshly lifted from the pot is a delicacy with a nice, soft surface and a very springy texture. In addition to the “kama-tama udon,” there’s also cold udon and tsukemen noodles similar to zaru-style noodles. There’s only counter seating available, and the soup stock and seasonings are all self-service. The restaurant closes once the noodle supply runs out.

This udon shop opens at six in the morning, making it popular with those who like an early noodle fix. You assemble the udon yourself with the shop's udon scoops and dashi tank. To ensure everything's fresh as can be, nothing sits around longer than 15 minutes. You also add seasonings like green onion, ginger, sesame, shichimi seven spice mix, tenkasu tempura bits, daikon radish, wasabi, and lemon yourself. They have lots of side dishes too.

You can enjoy the noodles in the simple soup stock and soy sauce broth, and they’re delicious with shichimi spice as well. This is the main store of Tamoya udon, which has shops not only around Kagawa, but also nationally and even overseas. Popular with the local residents, customers are always lined up at lunchtime and on the weekends. The spacious store has counter seating; tables, and also tatami floor seating. The restaurant is completely self-serve, so one can heat the noodles to the preferred temperature and pick one's own toppings of choice. One of its distinctive features is the open kitchen design, where all of the operations of food preparation are in view; from kneading the noodles, boiling, to frying the tempura. This is designed with the concept that 'each of the staff, as well as the owner, will work with a heightened awareness of the customer.'

Kagawa Areas

around-area-map

Japan’s smallest prefecture, Kagawa, may take up just a small corner of Shikoku, but it has grown increasingly popular with the recognition of Naoshima, its "art island" in the Seto Inland Sea between Shikoku and Honshu. Just a stone’s throw from the islands, mainland Kagawa’s prefectural capital, Takamatsu, holds history in its castle ruins and its pride and joy, Ritsurin Garden, is known as one of the country’s best gardens.
