    Osaka Osakashi Chuou-ku Minamisemba 3-8-1
A venerable udon noodle shop located in Osaka City’s Chuo Ward said to be the originator of kitsune udon noodles. When the restaurant was first founded in 1893, it served the inari fried tofu separate from the udon noodles, but after it became common for customers to add the inari to their noodles, the restaurant began serving the noodles with the inari already on top. The dashi stock, noodles, and spongy, juicy fried tofu made according to the same recipe as when the shop first opened are the taste of old Osaka.

Udon soup the same for any toppings. One of the bowls I got a tiny piece of fish cake. No surprises. Size of the bowls are pretty small, not filling at all.

    Osaka Osakashi Higashinari-ku Higashiobase 1-1-4
This is a quiet Sanuki udon noodle store, located about a minute on foot from Tamatsukuri Station on the JR Osaka Loop Line. The characteristic of the noodles is that they are very chewy hard noodles which few Osaka people were familiar with. Japanese wheat is matured for two days, so one can sense the smell of the wheat when biting into the noodles. For the soup stock, they are using natural Kombu and bonito which goes well with noodles to make a white soup and to curb the sweetness of the soup stock. Popular dishes at the restaurant include “Toriten (tempura style fried chicken) curry Udon” which is topped with three large tempura style fried chicken pieces and “MK noodles accompanied by dipping sauce” which is made using Hungarian Mangalica pork.
