    Founded in 1898, the Ebisu Soba restaurant is the oldest Soba noodles restaurant in the Hida Takayama region. Ebisu Soba makes its Soba noodles using a unique recipe that has remained largely unchanged since the restaurant was founded, with a ratio of 70–75% buckwheat flour to 25–30% wheat flour. The restaurant is proud of its noodle broth, made using a secret recipe which involves allowing the broth to steep for a specified period of time; this broth gives the Soba noodles their delicate, delicious flavor. Ebisu Soba is located in a traditional Machiya townhouse, so diners can enjoy a unique atmosphere redolent of times gone by. The restaurant is situated around 15 minutes’ walk from JR Takayama Station.

    Delicious noodles. Very helpful staffs who help to fulfill our orders. We request to have a quail egg for the traditional soba noodles which is not inside the menu. Their curry ramen is yummy too.

    A soba restaurant right in front of Gero Station. Their nihachi-soba noodles (80/20 buckwheat/udon flour mix) are hand-made daily from carefully selected domestic buckwheat that they stone-grind themselves. The noodles have a mild aroma and taste great going down. They also sell Sasa-zushi, a Gero Onsen specialty, consisting of bite-sized sushi wrapped in a bamboo leaf. They offer three varieties: sea bream, salmon, and mackerel. With just a hint of the bamboo leaf's fragrance, try one and you may want more. You can also get other items you'd expect to find at a soba shop, like soba miso, stewed Hida beef, skewered rice dumplings in a sweet soy glaze, and goheimochi rice cakes on a stick.

    A soba restaurant at Roadside Station Seiryu no Sato Shirotori located a five-minute drive from Mino Shiratori Station. They offer freshly made soba noodles from locally produced buckwheat flour. The pleasing aroma of the noodles goes great with the broth made with pure local water. They also offer a variety of side dishes like hoba-sushi, a Gifu seasonal tradition with vinegared rice wrapped in a magnolia leaf. Other items include mountain vegetable tempura and sobagaki buckwheat dumplings. They also hold soba making workshops (reservations required).

    A soba noodle shop near the Sogi-sui Spring (also known as Hakuun-sui), which was certified among the best of Japan's Top 100 Famous Water by the Ministry of the Environment. They use this great Gujo water along with carefully selected domestic soba flour to make their noodles. Their most popular meal is their chilled zaru soba noodle and Hida beef rice bowl set, featuring buckwheat noodles with a pleasant texture and aroma and a small Hida beef bowl prepared with soba broth. Offering a little taste of luxury in a casual atmosphere, their Hida beef bowls are often sold out due to limited quantities. Abandoning the air of exclusiveness that some soba shops have, their Chomolungma zaru soba featuring an extra-large serving of noodles is popular with young people challenging themselves to eat it all.

    A soba noodle restaurant with a 13-meter diameter waterwheel, part of a row of five and the largest in Japan. They serve fresh noodles made from 100% Shokawa soba flour ground from quality buckwheat grown on the nature-rich highlands. The noodles have a pleasant scent and feel good going down. Their Kanzarashi soba is a Shokawa local favorite only available in early June. Known for their sweetness, the noodles are made from buckwheat berries that have been soaked in the Shokawa River in midwinter and repeatedly freeze-dried. They stop serving the noodles for the season as soon as the stock of buckwheat berries is used up, so lots of people seek them out as soon as they are available.

    "This handmade udon noodle shop is located a ten-minute walk from Tajimi Station. You can easily find it by the restaurant's exterior that shows its long history. Their signature dish is ""koro udon,"" which has udon and kishimen noodles made mainly in the Chubu region with soup. Thick, handmade rectangular noodles like kishimen have a pleasant texture and are perfect with the sauce made with tamari soy sauce (which uses less wheat and is thicker and less salty). The standard way of eating is to compare the ""korokake"" (cold udon) and the warm ""Shina soba"" that uses homemade lard."

    This soba buckwheat restaurant is located approximately five minutes from Shirakawago Interchange at the entrance of the World Heritage Site, Historic Villages of Shirakawa-go and Gokayama. Using only native varieties of buckwheat and handling it from cultivation, the restaurant has been counted as a farmer's restaurant by the Ministry of Agriculture, Forestry and Fisheries as a certified farmer for 40 years. Their freshly cooked buckwheat noodles ground with a stone mill have a delicate taste that changes in flavor over time. Their blackish thickly cut buckwheat noodles are a prized dish where you can enjoy the refreshing flavor of the buckwheat itself.     This authentic handmade soba buckwheat noodle shop is where you can enjoy noodles made with coarse flour from Hidashokawa. To enjoy the original sweetness and aroma of buckwheat, this shop's suggested way of enjoying it is to have the first bite without dipping sauce but with Andes rock salt. The original simple and fresh taste of buckwheat spreads in your mouth as you eat it. You can taste a deeper and different taste with salt if you have it with wasabi from Hidasugo after enjoying its aroma. Sobayu (hot water left in the pot after boiling soba) is a strong type that is slightly thick. It is rich in rutin, which is said to be effective in lowering blood pressure.

    Located in Magomejuku of Nakatsugawa City, Gifu Prefecture, this soba restaurant is in an old wooden building that exudes history. The interior has a Japanese presence that maintains the feel of a post town, keeping a calm atmosphere you can stretch out in. The dirt work floor is cool in summer, and the coal fire in the fireplace keeps it warm in winter. They do their own milling with a stone millstone, and the thick noodles—only enough made as needed for the day—are hearty and feature a unique taste.     This soba buckwheat noodle shop to the west of Yanagibashi Bridge was founded in 1933. They still make their noodles the old-fashioned way with Hida raised buckwheat, stone-ground and formed by hand every day. Because of that the amount they can make is limited, and although they’re open until 20:00, they close once they’re sold out. Their wild vegetable soba is a local favorite, and their soba-gaki also comes recommended. They have plenty of both hot and chilled options, as well as toppings like soft boiled eggs and grated daikon radish with ume plum. Their Soba Kaiseki banquet cuisine served in the evening requires a reservation.

    The food is very good! The staff is nice. They get an extra point for speaking English!! The atmosphere is also cool, very authentic.

    This handmade soba and udon noodle restaurant is located across from the Juroku Bank and near the front of JR Takayama Station. Their springy and flavorful homemade soba noodles are made exclusively with buckwheat grown in Hida that has been coarsely ground with a bespoke stone mortar. We recommend their juwari soba (soba noodles made without any wheat flour), which allows you to enjoy the inherent flavor of buckwheat. Their juwari sansai zaru soba, which is their juwari soba noodles served on a bamboo sieve along with stewed edible wild plants and seasonal tempura, is an extravagant treat. Most of the wild plants featured in the dish were collected by the restaurant’s owner.

    This soba noodle restaurant is located a seven-minute walk from Gero Station on the JR Takayama Main Line. The restaurant exclusively uses small-seeded buckwheat grown by producers in Okuhida and Nagano Prefecture it has worked with for more than three decades. This buckwheat is then ground by hand with a stone mortar and used to make their fragrant and notably sweet soba noodles. In addition to their chilled hand-ground zaru soba (soba served on a bamboo sieve), their menu features a full range of items that allow you to fully enjoy the flavor of the ingredients. These include kake soba (soba in hot broth), tempura soba (soba served with tempura), and soba manju buns. It also includes their sweet and richly flavorful sobagaki (buckwheat dumplings), which are limited to just 10 servings per day.

    This soba shop about a one-minute walk from Gujo-Hachiman Castle Town Plaza makes its noodles by hand. With a motto of freshly ground, freshly made, and freshly cooked, its soba is as fresh as it gets. Even in winter they only serve chilled zaru soba to emphasize the noodle's buckwheat flavor and feeling going down. You can also order a set garnished with karami daikon radish. One of their specialties is The Ultimate Soba Shop Tempura with different tempura fillings wrapped in soba noodles.     This famous handmade buckwheat noodle soba shop is in Gero Onsen. It's in a kominka (traditional Japanese house) a nine-minute walk from JR Takayama Main Line's Gero Station, and lots of its regular customers are locals. The shop strives to use healthful ingredients as much as possible, including their seasonings. Their Mushroom Soba loaded with Gero-grown shiitake, maitake, shimeji, and nameko mushrooms is a local favorite and the prefecture considers it super healthy. When tomatoes are in season, they also offer their one-of-a-kind Tomato Udon, with thick wheat flour noodles.

    岐阜市柳津町、イオン東にある『丸亀製麺 柳津店』。お馴染みの大型うどんチェーン店。いつ食べても飽きないシンプルなうどん。安価で美味しい庶民的なお店です。今回も家族4人で来てかけうどんを注文したが、全然こしがなくて前日の残りみたいです。とても丸亀のうどんと思わない。自分たちだけこんなうどん出されたと思わない、管理システムにすごく疑問があります。
