    A soba noodle restaurant with a 13-meter diameter waterwheel, part of a row of five and the largest in Japan. They serve fresh noodles made from 100% Shokawa soba flour ground from quality buckwheat grown on the nature-rich highlands. The noodles have a pleasant scent and feel good going down. Their Kanzarashi soba is a Shokawa local favorite only available in early June. Known for their sweetness, the noodles are made from buckwheat berries that have been soaked in the Shokawa River in midwinter and repeatedly freeze-dried. They stop serving the noodles for the season as soon as the stock of buckwheat berries is used up, so lots of people seek them out as soon as they are available.

    "A restaurant that's part of the HIKARU MUSEUM, the largest museum in the Chubu area. Guests dine on casual fare like pasta and curry and sweets like cakes and waffles in the wide-open shop with its large glass windows. The restaurant recommends its own soft and fluffy chiffon cake. Chiffon means ""silk fabric,"" and their additive and artificial flavor free banana chiffon cake is worthy of the name. Their ""jade ramen"" made with soft shell turtle extract, fried garlic, and specially made low-calorie chlorella noodles is also popular."

    "A curry shop with a modern facade three minutes on foot from Takayama Station. The shop has a counter and raised tatami floor seating with low tables. The curry features lots of onions and a blend of 28 spices. The store's motto is ""Curry is Alive."" It takes about eight days to make their curry roux, and another day on top of that to make their own curry sauce. Hida pork curry is their signature dish. It's lighter than it looks and goes great with a richer curry. It's a popular shop with foreign tourists visiting Takayama."

    A cafe and gallery on the grounds of Sakurayama Hachimangu Shrine. Attached to a Hida pottery shop, the cappuccino-loving senior couple who runs this cafe serves some great coffee. Their carefully hand-dripped java is nicely bitter with a pleasant flavor. They also sell items like affogato, sweet vanilla ice cream drizzled with bitter espresso, and cafe frappe, perfect for hot summers. Many tourists stop here for a break while visiting Sakurayama Hachimangu Shrine or the Takayama Matsuri Yatai Kaikan.

    Best Coffee on our trip so far. Very friendly service and welcome. Close to the Takayama Matsuri Yatai Kaikan. Beautiful selection of pottery and ceramics to purchase.

    This dumpling shop is located on Takayama Honmachi 2-chome shopping street, which was once the central shopping location in Takayama. For over 60 years since its establishment, their mitarashi dango (rice dough dumplings with sweet-salty sauce) using original dumpling dough and soy sauce ordered directly from a soy sauce brewery were famous. Takayama's mitarashi dango are different from everyday sweet and salty dumplings, and are characterized by their unsweet taste from being made with the fragrance of the soy sauce-based sauce. These small dumplings are perfect for eating while walking around Takayama. The shop sells zenzai (red bean soup), which warms up the body, freshly-ground coffee and gohei-mochi rice cakes (grilled rice cakes skewered and basted in sweet walnut miso) with a sesame aroma, and you can also the inside tables.

    This dumpling shop is located a ten-minute walk from Takayama Station at the foot of Kajiyabashi Bridge. It sells salty mitarashi dumplings (rice dough dumplings with sweet-salty sauce) that are fragrantly made with an original soy sauce-based sauce instead of the usual sweet dumplings. Their sauce has a traditional flavor that has been used since its establishment. It is a special sauce made by blending three types of soy sauce. The shop also sells Hida's local dish of gohei-mochi rice cakes (grilled rice cakes skewered and basted in sweet walnut miso) that are also not sweet, so you can experience the slight sweetness of the glutinous rice.

    This ramen shop that has been loved for more than half a century in Takayama is where you can eat New Year's ramen instead of New Year's soba noodles. You can eat traditional ramen noodles in this retro shop nestled in a narrow alleyway. The soup made with a chicken base and vegetables and bonito has a simple soy sauce taste. It goes perfectly with the curly thin noodles, and is something you want to eat after drinking alcohol. In addition to basic ramen, they also have Char siu pork and wonton noodles, chilled ramen available only in the summer.

    I was their first customer last Feb 25! The family that runs Kikyouya is so accommodating. I loved their Takayama ramen to the point where I managed to slurp my bowl clean :) Soup was light but...

    "This handmade udon noodle shop is located a ten-minute walk from Tajimi Station. You can easily find it by the restaurant's exterior that shows its long history. Their signature dish is ""koro udon,"" which has udon and kishimen noodles made mainly in the Chubu region with soup. Thick, handmade rectangular noodles like kishimen have a pleasant texture and are perfect with the sauce made with tamari soy sauce (which uses less wheat and is thicker and less salty). The standard way of eating is to compare the ""korokake"" (cold udon) and the warm ""Shina soba"" that uses homemade lard."

    "This long-established Japanese confectionery shop was started in 1798. Ogaki is called the ""City of Water,"" and the popular confection ""Kinchoen Manju"" is the result of trying to create a sweet that suited the water of Ogaki with modified research. The sweet bean paste using plenty of good quality groundwater has a clean taste without any harshness. It is their prided product wrapped in yeast for making sake that they have made for over 150 years. Tesshin Ohara, who was once the feudal lord of the Mino-Ogaki domain, was very impressed when given them, and it is said the name of the confection was chosen in a song to praise it."

    This soba buckwheat restaurant is located approximately five minutes from Shirakawago Interchange at the entrance of the World Heritage Site, Historic Villages of Shirakawa-go and Gokayama. Using only native varieties of buckwheat and handling it from cultivation, the restaurant has been counted as a farmer's restaurant by the Ministry of Agriculture, Forestry and Fisheries as a certified farmer for 40 years. Their freshly cooked buckwheat noodles ground with a stone mill have a delicate taste that changes in flavor over time. Their blackish thickly cut buckwheat noodles are a prized dish where you can enjoy the refreshing flavor of the buckwheat itself. In addition, their baked confectionery using buckwheat flour is also counted as a sixth industry certified product, and is also listed in Michelin Guide Gifu 2019.

The Suisai Kinton is particularly popular and customers love the gooey texture. Consisting of famed Nakatsugawa mashed chestnuts covered with an elegantly sweet koshian (smooth azuki bean paste) and a delicate jelly coating, to Japanese people, this exquisite treat exudes a nostalgic atmosphere recalling the mountains and fields along the old Kisoji road.
