    This soba noodle restaurant, originally under the direct control of the Zenkoji Temple, has long been a favorite of temple visitors and locals. Established in 1890, this well-reviewed restaurant has continued to make soba noodles according to a traditional recipe and production method for three generations and received three registered trademarks in 1972. The restaurant's signature Ippin Gozen Soba noodles are made with buckwheat flour from Nagano and have a rich buckwheat flavor.

    長野市の善光寺表参道にあるそば屋さんです。店名の「クイチ」にちなみ、つなぎがかなり少ないそばが味わえます。個人的にはつなぎが少ない方が風味が増すので好きなんですけどね。信州人は基本的にざるそばですが、温かいそばのメニューも充実していて観光客にもオススメです。

    A soba noodle restaurant located next to Iiyama Station which has been in business for over 25 years. A stone mill in the restaurant is constantly running, and the establishment serves noodles made with buckwheat flour ground throughout the preceding day. The restaurant's noodles are juwari soba noodles made with 100% buckwheat flour. The establishment only uses the famous spring water of Uchiyama in Kijimadaira Village in its noodles. In addition to the soba noodles, the restaurant's soba oyuwari soba shochu mixed with water used to make soba noodles is also recommended.

    This soba noodle restaurant, recently remodeled in 2017, has been a favorite of many since it first opened in 1990. Dedicated to preserving and sharing local cuisine, the restaurant serves soba noodles and sasazushi, popular local Tomikura dishes. Tomikura soba noodles make use of thistle fibers to hold them together. The restaurant's sasazushi has a rich flavor that isn't too sweet. Both are simple dishes whose flavor you will not tire of no matter how much you eat.

    飯山に行ったら「笹寿司」は絶対に食べるべき! 特に「かじか亭」がオススメです。 料金は少々高いけど、お蕎麦と笹寿司がとても美味しく、一度食べたら忘れられません。 一時、閉店しましたが、2017年4月27日にリニューアルオープンしました! 新しくなった「かじか亭」、行ってみようかな・・・

    A soba noodle restaurant situated along National Route 18 in Oiwake, Karuizawa Town, Kitasaku County, Nagano Prefecture. Using choice flour stone milled from buckwheat grown at the foot of Nagano's Mt. Asama, the restaurant serves ni-hachi soba noodles made with 80% completely de-hulled buckwheat flour and 20% wheat flour, Sarashina soba noodles, inaka soba country-style noodles, and other soba noodles made by hand. In addition to the Aimori combo, which comes with two different varieties of noodles; and the Ebi Oroshi Soba noodles served with shrimp tempura and grated daikon radish, customers can also enjoy hoto noodle soup, a la carte dishes, and a soba kaiseki course meal (advance reservation required).

    匠の手打ち感が出てるお店。お弟子さんも沢山取られてるらしく、久しぶりに美味い店見つけました。飲めたのでオススメのツマミはと聞くと、牛すじとか。こちらも絶品です

    蓼科山登山後に白樺湖周辺に宿泊して、その翌日の昼食に利用しました。県道40号線沿いにありますが、白樺湖からはちょっと距離があります。店内は4人用テーブル4卓と小上がりがあります。そばが主体のお店で、味噌おでんもありました。「ざるそば」をいただきましたが、二八そばで喉越しの良いものです。香りもあり美味しくいただきました。

    This soba restaurant located approximately 10 minutes on foot from JR Hotaka Station is distinctive for its western-style exterior that resembles a lovely pension enveloped in greenery. This is a famous restaurant that is well known for its traditional soba that are handmade with natural spring water from Azamino and soba flour grown at the foot of the Yatsugatake mountains and milled with a stone mortar. They also pride themselves on their soba-tsuyu broth made without any chemical seasonings using ingredients such as wild bonito, konbu (kelp) and soy sauce. In addition to their simple Mori-soba, other well-liked offerings on the menu include the Tenkei-soba which is topped with approximately 10 types of ingredients and the Oshibori-soba that nearly brings tears to the eye thanks to the juice squeezed from a spicy radish.

    This soba restaurant in Nagano Prefecture’s Azumino City is so popular that the reservation book inside the store fills up before the restaurant opens. The interior shows their attention to detail such as tables using old wood and items handmade by artists, all within a dignified environment comprised of an old storehouse with thick earthen walls and wooden beams. The zaru soba which uses the flower buds of wasabi as a condiment is an exquisite item that will make you want to eat more of thanks to its gentle rich-tasting tsuyu sauce and fragrance of the wasabi. The Yukibana Zaru Soba that is topped with plenty of tororo (grated yam) as well as gold dust is also popular. They have an extensive field, soba field, and garden in which hydrangea and cherry trees bloom, which make for nice places to enjoy a stroll either while waiting or after the meal.

    3回目の訪問です。11月15日(日)のお昼にお邪魔しました。大きな窓から見える秋の風情が素敵。案山子、野菊、ハラハラと舞い落ちる紅葉。ざるそばの盛りつけには、娘には野菊、主人のは笹、私のは紅葉が添えられていました。

    Kaida Highland spreads out from the base of Mt. Ontake in Kiso Town, Kiso County, Nagano Prefecture. Jointly run with accommodation Fumotoya which is surrounded by beautiful nature, the handmade soba noodles here are well-considered even among Shinshu and are made with Kaida Highland buckwheat flour. The simple Zaru Soba is popular for its straightforward flavor and feel while eating. The Toji Soba, in which the soba noodles are eaten by boiling them in a basket in warm tsuyu sauce, is also well-regarded.

    This is an old soba noodle restaurant on the shore of Lake Suwa around a seven-minute walk from Kamisuwa Station, and is famous for serving noodles to the Showa Emperor and Empress. The Rankiri Teuchi Soba made with buckwheat flour from famous soba area Mt. Yatsugatake Sanroku and using family tradition techniques has a wonderful flavor that is typical of Shinshu. The relaxing Japanese atmosphere is created with touches like a sunken hearth, tatami floor seating and a stuffed deer. It is a place not only for lunch while exploring Lake Suwa but is also great for dinner parties and special occasions too.

    茹で加減があまりにもひどく、味云々ではありません。蕎麦がきに切れ目が入っている?はさすがに言い過ぎか、という感じ。 注文後に娘に「こんなところでうどんを頼むなんて」などと余計なことを言いましたが、うどんが正解なんですね。

    A small soba noodle restaurant located Takato-machi, Ina City, Nagano Prefecture, which primarily serves Takato soba, a type of soba which has been enjoyed in the mountain region of Takato since the Edo period. Masuya uses Shinsu gen-soba buckwheat to make three different noodle types: “gen,” made with flour ground with the husks still on to create a firm, slippery noodle; “nuki,” made with coarse flour ground without the husk to produce a highly flavorful noodle; and “inaka,” which is made with 100% buckwheat flour that results in a flavorful, chewy noodle. At Masuya, all soba noodles are served in a simple zaru-soba style on woven baskets. Masuya’s popular Takato soba is eaten with a sauce made of miso, spicy grated daikon radish, and shredded spring onions; you can also order a combo plate and enjoy all three of Masuya’s soba varieties.

    A long-standing soba noodle restaurant located kitty-corner from the Sasa no Yu bathhouse in the Shibu Onsen area in Yamanouchi Town, Shimotakai County, Nagano Prefecture. The restaurant makes its own soba flour, grinding buckwheat from Shinshu contract farms with a stone mill. Each morning, Tamagawa carefully prepares its noodles by hand, making only the amount to be used that day. Popular items include the zaru-soba, which lets you enjoy the simple and true flavor of the noodles; as well as the tororo-soba covered with grated yam and the kurumidare-soba topped with a walnut sauce. The restaurant’s desserts are also popular, such as the soba soft serve ice cream, which can only be ordered by customers who have ordered soba noodles. Smoking prohibited.

The restaurant’s Kirishita soba noodles, made with Shinano-grown buckwheat flour, boast an excellent fragrance, flavor, and texture. This popular restaurant is also one of only a very few locations where you can eat Shinshu Hisui soba noodles made with Nagano S8, a new buckwheat cultivar developed in 2013. Takasawa also serves seasonal mountain vegetables, tempura, and Japanese pond smelt, giving you the chance to enjoy the delicacies of Shinshu.

    黒姫高原スノーパークの帰りに寄りました。新潟との県境がすぐの所です。 店内は8人掛けくらいの一枚板のテーブル席4つと別棟に小上がりがありました。 お通しにそばだんごと漬物、食後にりんごの砂糖煮を頂きました。 限定そば粉のひすいそばと十割そばを注文しました。安くはないですが非常においしかったです。 お茶は信濃町のえんめい茶、そば湯はカウンターにありセルフでです。 支払は現金となります。

    At this shop, located in Bandokoro, Matsumoto City, Nagano Prefecture, you can enjoy water mill-ground Bandokoro soba made from scratch by the owner and his soba-farming family. The hand-made juwari soba—which does not use any thickening powder—is well received with its rich flavor and how smooth it goes down. The “soba set” is popular, packed with the good taste of Norikura Highland. Or enjoy local cuisine with items like the “homemade grilled trout in bamboo” which contains trout covered in Japanese pepper miso and wrapped in bamboo leaves.

    漬物と蕎麦のセットで、シンプルですが、とても美味しかったです。 特に漬物に関しては、普段殆ど食べない私でも完食するほど美味しかったです。 後は、メニューの数とコスパがもう少し良かったら文句ありません。

They grind carefully selected domestic soba seeds into three different types, offering “sarashina soba” (first), “oraga soba” (second), and “inaka soba” (third) as piled soba (mori soba). There are limited quantities of “ishiusuhiki soba” which uses marunuki soba seeds ground in a stone mill. You can compare “sarashina soba” and “oraga soba” in the “aimori soba,” so it is popular, but the a la carte menu is also great, with tempura, and Japanese char and such available.

    This soba restaurant, founded as far back as 1624, is said to be the second oldest restaurant in Japan. The restaurant prides itself on serving great tasting soba with its commitment to “freshly ground, kneaded and boiled” noodles. Their white soba, made using traditional methods unchanged since the restaurant came into being, is one of their most characteristic dishes. The soup which the noodles are served in is made with carefully selected ingredients and tastes superb. A popular dish throughout the year is their soba sushi, and available only during the winter is their kamo nanban (duck and soba). The restaurant can seat groups of up to 40 people although you’ll need to book ahead.

    Tokuzenin Soba Gokui is a soba restaurant offering traditional dishes from Togakushi. It was originally a pilgrim’s lodging house where seasonal dishes are served to the visitors of Togakushi Shrine. This style became known as Tokuzenin (temple) Soba and here you can enjoy the tastes and surrounds of a Togakushi pilgrim’s lodging house. The thin, handmade soba noodles are a real treat. The noodle soup is made with a special soy sauce with no added food additives. All the soba noodles are freshly made by hand so the restaurant closes for the day once they have run out. The spacious restaurant has ample seating with 24 seats each on tatami mats and at tables.

    Since its founding, this home-grower of soba in Asama foothills has been dedicated to local production-local consumption, as well as safety. It has been featured in a variety of media due to its efforts and delicious results. The soba is a 70% soba blend handed down since Hidehisa Sengoku, the first Lord of Shinshu Komoro clan. This percentage is said to be the best for health. The most highly rated dish would be the “walnut soba” eaten with a sauce meticulously ground from carefully-selected walnuts.

    美味しかったけど食べ終わったあと器から100円玉がでてきてびっくり!更に店員さんはお客さんが入れたんじゃないよね?の発言に追い討ちをかけるような酷いひと言!100円玉が入っていた蕎麦だけお代はいいです、と言われましたがお金払ってももう行きません、草笛さんのお蕎麦を食べたく遠方より来ているお客さんだっているということ、もう少し大事にしてほしい。

    Sobakura Chojian has regularly featured on TV programs. It’s a handmade soba noodle restaurant in Komoro City, Shinshu. The charming Japanese-style restaurant with a 120 year long history is made entirely out of cypress wood. There is also an annex where groups of up to 60 people can sit. The soba noodles made with homemade buckwheat flour taste delicious with a rich and sweet flavor. The restaurant prides itself on using local ingredients and visitors can taste seasonal Shinshu produce such as wild edible plants and spicy white radish.
