Ichiyo is a soba restaurant located along National Route 147. The owners take the utmost care in using only unprocessed buckwheat grown in the Shinshu region and in painstaking preparing it. They make their own stone-ground flour and keep both finely ground and coarsely ground varieties on hand. The soba made with coarsely ground flour has a unique rich flavor and an al dente texture, while the soba made with the finely ground flour has just the right combination of savory and sweet flavors. There are many dishes on the menu, both Zarusoba (soba served on a bamboo tray with dipping sauce) and Kakesoba (soba in broth), as well as udon noodles and small plates.

A restaurant located on the Nagano Prefecture side of the Mt. Ena tunnel on the Chuo Expressway. There you can dine on fish dishes made with amago trout and char raised in clear streams flowing from 2,191-meter Mt. Ena. Nothing beats eating the salt-grilled fish around the tables with built-in fire pits. You'll definitely want to order gohei-mochi rice cakes, an Ina Valley local favorite smothered in a secret sauce made with walnuts and Japanese pepper. They also have a fishing pond and you can grill or fry the fish you catch right at the shop. Of course, they'll clean them for you to take home, too.

They aren't limited by their relationship with other shops, so they pursue classic soba goodness their own way. Their Dattan Soba comes recommended; it contains about 120 times more rutin than ordinary soba. The town's specialty product, Shinano Kiriyama Dantan Soba, is a fabulous dish that overturns the conventional wisdom that bitterness has no place in food. For dessert, try their popular Datan Soba Cheese Tart made with special buckwheat flour and lots of cream cheese.

"Maruyama Coffee's fourth shop is located in the Harunire Terrace with its concept of ""everyday Karuizawa."" They use a metal filtered French press to extract the inherent goodness of the coffee. This lets you enjoy their high quality specialty coffee in Karuizawa's open air surrounded by its natural abundance. It is also the only Maruyama Coffee branch with an on-site bookstore, featuring carefully selected titles you can purchase on the spot. We also recommend grabbing a coffee to go and strolling around Harunire Terrace, which is on the Yukawa River."
