    The wooded estate of Goichi Wine was opened in Kikyogahara, 700 meters above sea level in 1911. The winery focuses mainly on producing merlot and chardonnay wines. Wine production is becoming increasingly popular not only in Japan but throughout the world too. Goichi Wine produces a botrytized chardonnay, quite uncommon in the world, made with the noble rot fungus naturally generated. Visitors to the winery are also welcome to wonder around the seven hectare vineyard. There is a shop at the winery so you can sample and buy some of their fine wines.

Popular products include their Fruit Rye that features the fragrance of rum-soaked raisins and orange peel. In addition, they sell approximately 70 types of breads including the Chocolate Bread that is limited to Karuizawa. The shop features a space to eat inside.

    We loved everything we tried here! It was our go-to breakfast during our two day stay in Karuizawa. I wish I could have brought some of it home!

Situated along the Shinano Ina Alps Highway at the entranceway to the famous cherry blossom viewing area of Takato travelling om downtown Ina City, the shop's signature product is its Kashiwa Manju steamed buns wrapped in an oak leaf. The shop offers three choices of filling: tsubuan coarse sweet red bean paste, edible wild plant and rice, and smooth bean paste in a buckwheat and walnut dough. These exquisite culinary gems, made with Nagano wheat and buckwheat flour for the dough, exude the culture of Nagano. A perfect place for tourists to pick up gifts and souvenirs, many of the shop's sweets are rooted in the area, such as the Sakusaku Kansuke crispy wafer cakes made with amaranth, a local Ina specialty product; and Takato Manju, a Takato standard.

    A bread bakery located on the first floor of the Shibutoge Hotel a 50-minute drive from the Shinshu Interchange on the Joshin-Etsu Expressway. The bakery is 2,000 meters above sea level, making it the second highest in Japan. Known for its charming breads made by hand the old fashioned way, popular selections include the coleseed bread stuffed with sauteed coleseed greens; and the walnut bread, whose dough is mixed with huge chunks of walnut. The standard anpan bean paste bread, cream bread, and melon bread are also recommended. The bakery closes each day when stock runs out.

The company invented Tokonese, a type of koji malted rice made using hot spring heat, and the company's handmade, additive-free natural miso made with this koji has long boasted excellent taste, umami body, and aroma. The factory's signature Shiga Kogen Miso comes in three different varieties depending on the ratio of koji and has even been introduced on television as Japan's most delicious miso. The company offers factory tours which include a tasting session of its products, as well as an activity which allows participants to try mixing steamed soybeans, koji, fermentative bacteria, and salt water like the factory does when it makes miso (note that both require an advance reservation).

Many of the shop's confections cunningly incorporate both Japanese and Western elements, such as the Shinano Oiwake buns filled with a cream crafted from butter, milk, and honey. The Kurumi Mochi walnut cakes and Imo Kintsuba sweet potato flour dough cakes, only available at this location, are particularly popular.

In addition to amakuchi, Tokusei amakuchi, and chukara varieties, the company's barley koji miso and buckwheat koji miso are also popular. The company also sells miso pickles, miso karinto snacks, soy sauce, and concentrated sweet amazake.

    This long-standing miso shop was established in 1832 and is located a five-minute walk from Matsumoto Castle. Primarily making and selling miso, the shop notably continues to make its miso according to an old-fashioned, traditional method called miso-dama-zukuri. The shop only uses domestic ingredients to craft its products. Particularly recommended is the Hourei miso, made using the miso-dama-zukuri method. Other varieties include the Shinshu miso-style Tenjo and Tanrei misos, and customers can choose the miso or misos they like the best. Originally a koji malted rice maker, the shop also sells an abundant variety of koji pickles made with ingredients from Matsumoto such as pickled coleseed greens and uri melon kasuzuke sake lee pickles.
