- Kassen Shintoku is a seafood restaurant under the direct ownership of Maruya Seafood, located a ten-minute drive from the Katayamazu Interchange on the Hokuriku Expressway in the city of Kaga, Ishikawa Prefecture. In addition to seafood rice bowl, sashimi set meal, and tempura set meal, customers can enjoy cuisine made from special local seafood, such as sea bass and Alaskan pink shrimp. The restaurant serves cuisine appropriate for each season: Shabushabu (stew) made with fresh wakame seaweed in the spring, natural oysters in the summer, and Kamameshi (rice dish cooked in a small pot) and sashimi made with snow crabs and queen crabs in the winter. The adjacent seafood store sells fish that customers can select, and the restaurant will prepare the fish they choose any way they specify.

- This gallery and café is located in the Yamashiro hot spring, in Kaga City, Ishikawa Prefecture. The bistro café, which has a view of the hot springs from the Bengara lattice windows, is a highly characterful space with Western-style tables set out. For lunch, the Bengara Ohitsu Zen course, which uses Kaga vegetables and Koshikari rice from contracted farms, is a popular choice. The café has a wide range of items on its menu, including the Kaga Fresh Vegetable Parfait, which uses Kaga siphon coffee and five-layers of Kaga vegetables, perfect for customers who want to take a load off their feet. Exhibits and events displaying works of artists from both within and outside the prefecture can be found in the hotel gallery.

- "A ryotei traditional Japanese restaurant which serves Kaga cuisine. The restaurant's vaunted duck dishes are made with live-caught duck, including duck caught using a ""sakaami"" net in the traditional way. Examples include jibuni duck meat slow stewed in a signature broth; grilled duck meat skewers, and kuwayaki sauteed duck. Of course, traditional duck jibuni served in a small lacquered bowl is also on the menu. The restaurant's dishes are served using beautiful Kutani ware and Yamanaka lacquerware, ensuring your meal will be a delight for the eyes as well. The restaurant has a variety of seating options to meet all manner of meal occasions, including counter seating, tatami mat seating, private rooms, and a banquet hall."

- "A traditional ryotei Japanese restaurant located a 10 minute walk from Daishoji Station. Here you can enjoy Japanese cuisine which harnesses the innate flavors of Kaga-grown ingredients. The restaurant has three floors. The first floor has counter, table, and tatami mat seating perfect for small to larger groups. The second floor has a medium sized tatami mat seating area while a banquet hall and dining rooms suited to various purposes can be found on the third floor. The menu includes set meals, mini kaiseki course meals, lunch-only omakase chef's choice bentos. The restaurant also serves limited time nabe hotpots made with seasonal seafood. Particularly recommended is the restaurant's ""Kamo Jibu Suki,"" a sukiyaki-style take on the popular local dish jibuni duck meat stew made with sakaami wild-caught duck and only offered from mid-November to late February."

Ishikawa Areas
Long, thin Ishikawa prefecture runs along the Sea of Japan up into Noto Peninsula. Highlights of the seaside towns lining the west coast include Kanazawa, often described as a "Little Kyoto" thanks to its old wooden tea houses and geisha culture as well as its picturesque Japanese garden, Kenroku-en.
