    A long-standing “ame” candy and syrup shop located in Kobashi-machi, Kanazawa, Ishikawa which was established in 1830. It is said the shop was started after the original owner witnessed the struggles of mothers who were unable to produce milk for their newborn babies and decided to create a highly nutritious ame which could be given to suckling infants. The shop’s ame is made with only domestic rice and barley. The shop’s signature item is its Jiro-ame, a “mizuame” thick syrup. This can be eaten as-is but it’s also popularly used as a natural seasoning and secret ingredient in vegetable, fish, and meat dishes.

The “tokusen Kaisen-don” select seafood rice bowl is particularly popular, and is piled high with local fish caught just that morning, tuna, crab, sweet shrimp, and sea urchin. At night, the restaurant serves local Ishikawa sakes and a la carte dishes made with the bounties of the sea. In addition to counter and table seating, the restaurant also has tatami mat seating, and everyone from individuals to groups can enjoy a leisurely meal at Hirai.

Situated inside a remodeled abandoned home, the subdued colors of the café’s décor create a chic atmosphere. The Sea of Japan stretches away into the distance outside the café’s windows and here customers can enjoy a quiet moment away from the hustle and bustle of the city. The café’s fluffy pancakes, made with Shio Cider, are particularly popular. The beef stew, made with slow-stewed Noto beef, is also well-reviewed. The café also has a shop and gallery space.

Customers can enjoy their tea and sweets while looking out at the garden through the latticed windows. The most popular sweet is the Maverick Parfait, created from a staff meal. The store’s soft cream is an excellent product, found only in this long-established store, and made with home-roasted Kaga-bocha tea leaf powder. The popular Yoshihashi, a high class Japanese confection, isn’t sold for taking home; it can only be enjoyed in the shop at a seat in the café area. Other customer favorites include the matcha green tea cream zenzai sweet soup, which combines the elegant sweetness of Noto dainagon adzuki beans with the flavor of matcha green tea; as well as the kuzu-kiri kudzu powder noodles made to order. Everything is served with Wajima lacquerware and other lacquerware plates, bowls, trays, and spoons. Inside this quiet shop, you can enjoy your treat while gazing out over the verdure of the adjoining park.

The shop’s vegetable ramen, topped with crisp domestic vegetables, is a comfort food in the Hokuriku region loved by people of all ages. The shop also offers a variety of side dishes; the Hachiban gyoza dumplings, which have a crisp outer dough enwrapping juicy meat and vegetables, are particularly popular.
