This soba shop, open since 1912, hand-makes soba with select ingredients. The dashi broth they use has not changed since the beginning. It's in a remodeled kominka (old Japanese-style house) private house that is 130 years old, and in addition to tables they have traditional open-hearth rooms that preserve a sense of history. We recommend the Shotaro Kaiseki meal, with an appetizer, steamed dish, soba crepe, and soba noodles.

This restaurant offers noodles made from soba ground, kneaded, and boiled with heart. They use whole grain soba from Niigata and Fukui ground early every morning so that it doesn't lose fragrance, and quickly finish it into soba for fresh eating. We recommend the Zarusoba & Koagedashi meal set with agedashi fried tofu made with Gokayama tofu.

Hand-made chewy soba noodles were delicious! I appreciate that the soba noodles for warm soup dishes are thicker than the normal-width soba noodles in cold dishes. The reason is because once boiled...

Toyama Areas

around-area-map

Toyama is one of the three prefectures that house the Japanese Alps, with its southern and eastern borders comprising one long stretch of mountains, out of which the Tateyama Kurobe Alpine Route is forged. While traditional crafts fill the northern coastal cities of Toyama and Takaoka, thatched roof houses offer unrivalled views against a backdrop of fantastic scenery at Gokayama in the mountainous area in the south of the prefecture.
