    Kojimaya Souhonten, said to be the birthplace of local specialty Hegisoba, located in Nakayashiki, Tokamachi City, Niigata Prefecture. Hegisoba is a type of soba that is served in a wooden dish called a hegi. Funori seaweed is added to the homemade buckwheat flour ground on a millstone to make this popular Niigata specialty. The restaurant serves a variety of dishes from bowls of noodles to more formal dishes, priding itself on always sticking to the three principles of freshly ground, freshly kneaded, and freshly boiled. A popular dish on the menu is their seasonal Tenbara-zen served with a large portion of kakiage (mixed vegetable and seafood tempura). There is also an area in the restaurant which introduces the history of the biggest water mills in the prefecture and the story behind hegisoba.

    This restaurant adjoins the Royal Tainai Park Hotel standing on a lake and surrounded by natural beauty. Modeled after a water mill, the restaurant stand’s on the hotels grounds and is enclosed by lush trees. The establishment serves fragrant, authentic handmade soba noodles which have many fans throughout the prefecture and beyond. Served fresh and piping hot, the restaurant’s noodles are made with flour stone-milled from buckwheat grown in Tainai. Underground spring water from the Tainai River gives the vaunted noodles a firm, chewy texture. Everything, from the edible wild plants used for tempura, to the condiments and chili pepper garnishing the tables is home-grown or gathered, and the restaurant is known for its use of fresh, just-picked ingredients from the mountains of Tainai.

    A regional cuisine restaurant located a 10-minute walk from the Untoan Temple, a Buddhist temple where the samurai Naoe Kanetsugu and the samurai lord Uesugi Kagekatsu studied in their youths. The restaurant’s building is constructed entirely of Japanese zelkova wood and was built some two centuries ago; inside, customers can enjoy the simple flavors of the area’s local cuisine. Particularly recommended is the Shikagoya Teishoku, which comes with a large number of local specialty dishes. The hearty meal includes cold zaru soba noodles made with local buckwheat flour, tempura, rice, and seasonal side dishes. The restaurant also serves many dishes you’ll find virtually no place else, such as deep fried karaage made with rare local Japanese fluvial sculpin; and kirizaidon, a rice bowl which is a popular cheap eat inMinamiuonuma.

    Uonuma no Sato Sobaya is a soba noodle shop located in the sightseeing spot Uonuma no Mori in the city of Minami Uonuma in Niigata Prefecture. It is housed in a distinctive building that was rebuilt out of parts taken from an old house, and it has an earthen floor and an open hearth to add to the somewhat nostalgic atmosphere. Unlike most soba in Uonuma, which is made using funori seaweed, this restaurant serves mostly Edo-style Nihachi Soba, in which the noodles are made by hand, using carefully selected buckwheat mixed with wheat flour. In addition to Mori Soba, cold noodles served with a dipping sauce, the restaurant also serves country-style soba, pure buckwheat soba, and Ten Seiro Soba, which is topped with plain and deep-friend vegetables.

    Shioya Tachibana is a 20-minute walk or a five-minute bus ride from Tsugawa Station on the JR Banetsu Saisen Line. The eye-catching exterior of this soba noodle restaurant resembles a classical Japanese house. Their handmade soba is made from pure buckwheat flour from West Aizu and the intensive 30-minute process only yields 10 servings of noodles per batch. During the summer months the recipe incorporates two parts udon flour to eight parts buckwheat. They are known for their Kaki-age Oroshi Soba meal which mixes cold soba noodles with a heaped helping of vegetable and seafood tempura. Their winter only Kaki Mizore Soba has rare oyster tempura and is also popular.

    This unique soba shop is found in the Matsu-no-yama Onsen area. Jazz flows through the bar-counters inside the shop mixing with the scent of dashi soup stock and noodles. The antiques around the shop were chosen by the owner who describes himself as a middle-aged delinquent. Coffee is served mid-day, cocktails at night, and can be had with their specialty soba made with spring water that wells up in the shop. Lots of their menu items include the local specialty nameko-mushrooms including their Exotic Curry Soba, perfect for after drinking, which combines the curry aroma with the thickness of the nameko-mushroom into a masterpiece dish.
