Unlike soba in the Kanto region, which is served with a strongly flavored dipping sauce, Izumi’s soba is served with a lighter sauce. In addition to a standard tempura and zaru soba (noodles served on a zaru bamboo basket), the restaurant’s soba garnished with tempura-style maitake mushrooms, a local specialty product, is also popular. There’s also soba served with a small bowl of yuba tofu skin, another area specialty. Izumi also carries local Japanese sakes, and you can enjoy a drink with your meal.

    A soba restaurant located close to Tobu Nikko Station. The restaurant operates out of the first floor of the Nikko Bussan Shoukai, a building originally constructed as a souvenir shop for the Kanaya Hotel. The historic building is a nationally designated Tangible Cultural Property. Many of Shinkyoan’s dishes are made with yuba tofu skin, a Nikko specialty. Try the standard yuba-sashi tofu skin sashimi, and the agemaki yuba deep fried tofu skin rolls. There’s also soba noodles topped with a hearty portion of yuba. Particularly unusual is the yuba ramen—ramen topped with agemaki yuba.

    The yuba (beancurd) is a local food here. They put it in all their dishes or u could eat it just by itself. Its a nice, clean and refreshing food. Good for vegetarians.

    Uoyo is an original yuba (tofu skin) soba noodle restaurant which is a well-known Nikko dish and you can feel free to enjoy yuba. Three types of yuba, including a deep fried then rolled yuba, Chojuage (dried tofu wrapped with yuba) and Zenmaimaki (deep fried royal fern wrapped with yuba) made by Fujiya which is a long-established yuba shop, are seasoned to top handmade soba noodles. The soba noodles use in-house milled gensoba (black buckwheat flour). Apart from yuba soba noodles, there is a range of menu items such as kamonanban (duck meat and onions) and Nikko maitake mushroom soba noodles.

    Piping hot soup with freshly made noodles. Cold and hot noodles are available. The menu is simple. During visit they did not have tempura on the menu.

    This soba noodle restaurant is just off the Kanuma Interchange on the Tohoku Expressway. Operating out of an old Japanese home situated along National Route 121, the restaurant serves choice soba noodles made with a variety of unhulled buckwheat native to Kanuma. The restaurant's signature, vaunted Nikko Sazare Soba noodles were named by the Nikko Toshogu shrine priest and have even been officially presented to the shrine. Before dipping your noodles in the restaurant's tsuyu sauce, made according to a recipe passed down for generations, be sure to also try them with just a little rock salt. The restaurant's Nira Soba noodles, a local Kanuma specialty, are topped with a heaping helping of fresh, mild Asian chives and are also highly regarded.

Bamboo trays piled with the noodles is standard, but you can get them with a warm dipping sauce if you wish. Their cute red and white udon noodles make an ideal gift for celebrations.     A long-standing soba restaurant founded in 1945. Located opposite the Kinugawa Plaza Hotel, they serve firm soba noodles made fresh daily. Their popular Hiyashi Tanuki is available year-round; it features savory tempura batter bits in a thick bonito soup stock along with the noodles. They still maintain the traditional flavor developed by the previous generation but provide the taste that fits to the time. The roughly 1,000 earthenware bells on display in the old-fashioned shop are a sight to see.
