The most popular miso ramen is a stock reduced down with pork bones, shellfish, and vegetables. This rich flavored broth is combined with the Hokkaido only thick chewy noodles. Probably born of necessity in this cold climate, this ramen warms the body to the core.

    This long-established ramen shop, founded in 1947 in Hakodate City, Hokkaido, is highly regarded for its straight noodles freshly hand made every day. Even though it is small, it’s a popular shop visited by many tourists. Their reasonably priced salty ramen, with its soup so transparent you can see the bottom of the bowl, is a particular favorite. The light soup slowly boiled with chicken and pork bones, kelp and vegetables accompanied with a side dish of fried dumplings is well worth trying.

    昼過ぎに行ったら並んでる人まででオーダーストップとのこと、改めて夕方営業にて行くことにした。開店の40分前から並んだので一番乗りで着席。塩ラーメンとチャーハンを注文、好みの味で大満足。夫婦でお店を回しており、二人とも感じがよく素敵なお店でした。

    Boasting a headquarters in Susukino area of Sapporo, this store is a miso ramen shop. Their motto is 'miso ramen that wakes all your five senses.' The trademark ramen has concentrated clear broth with a punch of pork, mature chicken and choice vegetables entwined around medium fat noodles. Their signature Miso Ramen broth is made from a blend of three different types of miso. The salty 'tomi torai men' noodle ramen is made using the fish paste of the 'wonder-fish' the northern blenny, only caught in the winter. The Kani Ramen, in which crab meat and egg whites make a rich gravy, is exclusively offered only at the New Chitose store.

    いつも新千歳空港でラーメン食べたくなるのですが、ここ最近失敗続き。。ちょっと並ぶことを覚悟して、今回は間違いない人気店をチョイス。1人なのでさほど待つことなく入店できました。おそらく空港価格のチャーシュー拉麺1460円に煮卵追加。ラーメンにしては高くつきましたが、結果的に美味しかったので満足!分厚いチャーシューもしっかり美味しい!そしてやっぱり札幌味噌は抜群に美味。次回からここにしよう!

You can sit down for a bowl of carefully crafted Kushiro ramen made with extra thin noodles, perhaps the thinnest in Kushiro, amid the sounds of jazz music. This shop's real draw is the specially made char siu pork, under the Shukoen brand. The meat is so tender it can be broken with chopsticks and has a crisp, soy sauce based flavor.
