    Uonuma no Sato Sobaya is a soba noodle shop located in the sightseeing spot Uonuma no Mori in the city of Minami Uonuma in Niigata Prefecture. It is housed in a distinctive building that was rebuilt out of parts taken from an old house, and it has an earthen floor and an open hearth to add to the somewhat nostalgic atmosphere. Unlike most soba in Uonuma, which is made using funori seaweed, this restaurant serves mostly Edo-style Nihachi Soba, in which the noodles are made by hand, using carefully selected buckwheat mixed with wheat flour. In addition to Mori Soba, cold noodles served with a dipping sauce, the restaurant also serves country-style soba, pure buckwheat soba, and Ten Seiro Soba, which is topped with plain and deep-friend vegetables.

    魚沼の里にあります。外から観ると趣のある古民家風建物で、室内は天井が高くとても広く感じました。 野菜ずくしの蕎麦と鴨せいろを頂きましたがどちらも美味しかったです。GW中だったのでお店は満員でしたが、店員さんには丁寧に対応して頂きました。 魚沼の里に来られたらこちらでランチを頂くことをお勧めします。

    This udon shop can be found in Kagawa Town, Takamatsu City, Kagawa Prefecture, and it is known nationwide for its owner, “Granny Rumi.” Her grandchild currently runs the shop, which offers the same handmade udon taste as always. Orders are handled by a self-serve system in which patrons divide into “kama-tama/kama-nuki” and “hot/cold/zaru” noodle lines. You can enjoy the noodles in the simple soup stock and soy sauce broth, and they’re delicious with shichimi spice as well. There are several varieties of tempura toppings, and rice balls, sushi, and more are for sale as well.

    空港から近いということもあってか、空港でレンタカーを借りた人がまず訪れるうどん屋さんのようです。空港から近いのはいいね。 有名店なので仕方ないのですが入店までに結構並びました。

    This soba noodle restaurant in Shiozawa, Minamiuonuma City has been covered in the media for its delicious hegi soba, an Echigo specialty that originated in the Uonuma region. Popular with locals and tourists alike, these buckwheat noodles use funori seaweed as a filler instead of the usual wheat flour. The hegi in the name stems from the name of the container used to serve them. The restaurant also offers set menus featuring their hegi soba as well as other cuisine. It also offers a variety of a la carte items including donburi (rice bowls). Their reasonable-priced and filling Tabataya Set comes with hegi soba, vegetable tempura, a salad, a chawanmushi (a savory steamed egg custard), rice, and Japanese pickles.

    Sarashina Nunoya is a true Edo soba noodle restaurant in Shibadaimon that was established in 1791 where guests can try traditional cooking techniques that have been refined for over 220-years. The soba noodle taste and color are prominent due to the hand-crafted stone grounded flour used to make them. The soup stock uses only four ingredients giving it a deep, rich, sweet flavor. Their seasonal soba are also incredibly popular.

    We enjoyed lunch here. The tempura was a highlight. The service is friendly and helpful. Well worth a visit if you are in the area.

    Located about 300 meters north of Togetsu-kyo Bridge in Arashiyama, Arashiyama Udon Ozuru is recognizable by its large paper lanterns. The restaurant carefully makes its own udon noodles, making sure to prepare only the amount that can be eaten in a single day. This udon is served with broth made from sliced mackerel, herring and bonito, with the addition of Kyoto-style ingredients such as wheat gluten, yuba (tofu skin) and green onions.

    Udon is handmade! Chewy and springy! They do good tempuras too! I recommend you don’t order their set so you can eat two servings of udons!

    Since its founding, this home-grower of soba in Asama foothills has been dedicated to local production-local consumption, as well as safety. It has been featured in a variety of media due to its efforts and delicious results. The soba is a 70% soba blend handed down since Hidehisa Sengoku, the first Lord of Shinshu Komoro clan. This percentage is said to be the best for health. The most highly rated dish would be the “walnut soba” eaten with a sauce meticulously ground from carefully-selected walnuts.

    美味しかったけど食べ終わったあと器から100円玉がでてきてびっくり!更に店員さんはお客さんが入れたんじゃないよね?の発言に追い討ちをかけるような酷いひと言!100円玉が入っていた蕎麦だけお代はいいです、と言われましたがお金払ってももう行きません、草笛さんのお蕎麦を食べたく遠方より来ているお客さんだっているということ、もう少し大事にしてほしい。

    A long-established udon restaurant founded in the middle of the Meiji period and said to be the originator of the Okazaki specialty kama-age udon (udon noodles straight from the pot). It was said that kama-age udon came about because the restaurant owner at the time picked up boiled udon directly from the pot and ate it warm. The udon noodles are especially chewy in texture and the broth is a closely guarded secret! Their miso-nikomi udon made with the local traditional Hatcho miso is popular with celebrities and many people alike. The nearest stations are Okazakikoen-mae Station and Naka-Okazaki Station.

    This is a soba noodle shop along the Ushu Road in the Saiwai-cho, Yamagata City. Founded during the Keio period, this over 150-year-old shop is the oldest store in Yamagata Prefecture. They offer hand-made soba noodles using the skills handed down by generations of artisans. There are a lot of other items on the menu besides soba, including udon, mugikiri, and microbrew jizake. The shop exudes the history of the Edo period, with a hearth, seating in the rice cellar all within this traditional restaurant.

    This soba buckwheat noodle restaurant is located in Hanamaki City, Iwate Prefecture. Opened in 1923, they provide tsuyu (soup base) using high-grade bonito flakes and soba buckwheat noodles using flour from Iwate. It is known as a wanko soba restaurant, and your bowl is endlessly refilled until you close the lid. The poet Kenji Miyazawa is also said to have been a customer at the time of its establishment, so there is a Kenji Set on the menu which includes the tempura soba and Mitsuya Cider he used to order.

    This is the main store of Tamoya udon, which has shops not only around Kagawa, but also nationally and even overseas. Popular with the local residents, customers are always lined up at lunchtime and on the weekends. The spacious store has counter seating; tables, and also tatami floor seating. The restaurant is completely self-serve, so one can heat the noodles to the preferred temperature and pick one's own toppings of choice. One of its distinctive features is the open kitchen design, where all of the operations of food preparation are in view; from kneading the noodles, boiling, to frying the tempura. This is designed with the concept that 'each of the staff, as well as the owner, will work with a heightened awareness of the customer.'

    This popular Shinshu (Nagano) soba restaurant serves thin-sliced kyuwari soba (noodles made with 90% buckwheat and 10% flour) made only with buckwheat flour from the Ono District in Tatsuno Town, Nagano Prefecture. Nomugi only serves fresh-made soba and closes when the day’s supply runs out; accordingly, it is common to find a line in front of the shop. The restaurant only serves simple zaru soba (soba served on a draining basket with dipping sauce) and soba in broth with five toppings—shiitake mushrooms, fried tofu, spinach, nori (edible seaweed sheets), and eggs. There are also only 12 seats in the restaurant.

    Miyatake Udon is a Sanuki udon noodle shop of near legendary status that has created several popular noodle and broth combinations. They make their udon the traditional way without any mechanical help, preserving their old-style flavor. The rectangular noodles twist and wrinkled slightly to better mingle with the broth. They also sell noodles to go, but during busy periods quantities are limited.

    A long standing, authentic Sanuki noodle restaurant which was established in 1959. A self-service style establishment, after ordering, customers receive their udon noodles and add toppings such as tempura before pouring a hot or cold broth or pure soy sauce on top. Both broth and soy sauce are right there on the serving table for customers to choose whichever they prefer. The establishment also sells noodles and broth for taking home.

    平日とは言えお客さんは誰もいない。10年以上ぶりに往訪。値段が上がったのは仕方がないですが、うどんが過去ワースト。酷くて店主には失礼ながら2口で断念。これじゃチェーン店に行った方が良いですし、香川に足を運ぶ理由がありません。 食べログ3.76でしたが。 たまたま残りものがあたったんですかね??訪れたのは10:30ぐらいでしたが。
