The basic menu consists of items such as salt buckwheat noodles with a clear amber soup made using various salts blended by the owner and miso buckwheat noodles from blended miso. It is easy to see their commitment to cooking without flavor enhancers and to directly purchasing Tsuyahime rice from Yamagata Pref. They also have seasonal dishes using seasonal ingredients, and they prepare special daily items like tsukesoba (soba served with separate hot soup) depending on ingredient availability. However, please remember that there are a limited number of these special dishes.

    This is a Tokushima B-class gourmet (reasonable and delicious) ramen shop. It serves ramen in rich soup made from slowly-cooked pork bones. The main topping is thinly-sliced pork belly simmered in a sweet but spicy marinade. Each table has a bowl of raw eggs and you can add as many of these to your noodles as you like. The shop’s website shows a photo of ramen topped with the yolk only, rather than the whole egg. You can also add marinated soft-boiled eggs so you can enjoy two different flavors of eggs.

    Established in 1972, this ramen purveyor is a one of the quintessential of Yonezawa ramen, for which many customers stand in line to enjoy. The shop has their own noodle making factory, and while seated at the bar one can watch noodles being made. The broth, which enhances the noodles, hand-kneaded prior to boiling, is made of chicken and dried fish simmered for hours to perfect the flavor. The not too heavy robust flavored soy based chuka-soba is served the traditional way with chashu-pork, naruto, and memma slices. The resilient, thin, crimped noodles are a perfect complement to the broth. The shop closes for the day when the broth runs out.
